Well, *why* should he have told Jack? For all we know he's never met the bloke before starting to work for him - would you tell your boss all about your relationship within three days of meeting him? And Ianto's 'relationship' was a bit more complicated than most... Also, if (and only if) you take the stuff on the semi-official website into consideration, the cleanup teams didn't take too kindly to those that were half-converted. Ianto had to have known that as well and chose to react accordingly by not telling anybody.
